Grilled Pork Chops with Soy Glaze

September 22, 2025

Autumn brings crisp air, earlier sunsets, and flavors that feel richer by the fire. Grilled Pork Chops with Soy Glaze captures that seasonal spirit with smoky sear, savory depth, and just enough sweetness to balance hearty fall sides. As the grill locks in charred edges and caramelized notes, the soy glaze adds warmth that pairs beautifully with roasted vegetables, apples, or squash. The result is a dish that feels right at home during cool outdoor evenings.

Fall meals invite family and friends to linger longer; this recipe is crafted for that. The rich, balanced marinade creates tender pork chops that taste rustic and refined, giving you an easy centerpiece for large or small gatherings. Serve it straight from the grill with seasonal accompaniments, and you'll have a meal that satisfies without fuss.

Serves 4

Grilled Pork Chops with Soy Glaze Ingredients

  • ¼ cup soy sauce
  • ¼ cup unseasoned rice vinegar
  • 2 Tbsp. dark or light brown sugar
  • 4 ½"-thick bone-in pork chops
  • Vegetable oil (for grill)
  • Kosher salt
  • Tender herbs (such as mint and cilantro) and sliced jalapeños (for serving; optional)

Grilled Pork Chops with Soy Glaze Directions

  1. Stir ¼ cup soy sauce, ¼ cup unseasoned rice vinegar, and 2 Tbsp. of dark or light brown sugar in a small bowl until sugar is dissolved. Prick 4 ½"-thick bone-in pork chops all over with a fork and place in a large resealable plastic bag or another airtight container. Pour in half of the marinade, seal the bag, and turn to evenly coat the pork chops. Set the remaining marinade aside. Let pork chops sit at least 10 minutes, or chill up to 1 day (cover and chill remaining marinade too).
  2. Prepare a gas or charcoal grill for medium heat; brush the grill grate with vegetable oil. Remove pork chops from marinade and discard marinade. Season the chops lightly with kosher salt and lay them on the grill. Cook pork chops, drizzling with reserved marinade and turning occasionally, until cooked through, 6–8 minutes.
  3. Top pork chops with tender herbs and sliced jalapeños (if using) just before serving.
